01Roots

Born in Chepén, La Libertad, in the north of Peru, the chef and owner behind Ceviche 595 grew up surrounded by the flavors, ingredients, and traditions of Peruvian cooking.

His cooking is not about following trends. It comes from his roots, his experience, and the flavors he has carried with him from Peru.

02The Journey

More than four decades ago, he left Peru and came to the United States to build a new life. Like many immigrants who arrive with ambition and a willingness to work, his journey was built step by step — through years of effort, persistence, and dedication.

Eventually, that work gave him the opportunity to open his own restaurant and pursue a simple mission: to bring the taste of Peru to the people of Florida. Ceviche 595 became the expression of that journey.

The Flavor Continues

His story continues through the food.

Today, every plate served at Ceviche 595 continues the same purpose that started the restaurant: to welcome people to the table and give them an authentic taste of Peru.
